We are a family-run dryland farm in Winchester, Idaho, committed to raising healthy animals and producing nutrient-dense protein for families who care where their food comes from. Our sheep and cattle graze timber pasture, cover crops, and field residues, creating meat that is clean, flavorful, and raised with intention. Animals are open-range grazed the majority of the year, with lambs finished on our own farm-raised barley and oats.

How We Farm
We have practiced no-till farming for over 30 years, focusing on soil health, plant nutrition, and long-term stewardship. Our sheep play a critical role in the farm ecosystem—improving soil biology, incorporating crop residue, managing vegetation, and providing natural weed control without reliance on herbicides.
Our fields and timber ground are rotationally grazed to support animal health, wildfire mitigation, and nutrient cycling. In recent years, we’ve removed synthetic fertilizers from our wheat, peas, mustard, oats, and barley, instead emphasizing carbon sequestration and naturally nutrient-dense crops.
This is a working farm—managed with care, purpose, and respect for the land.
The Farm
Hasselstrom Farms sits on the edge of the Camas Prairie between the Salmon and Clearwater Rivers. Winchester was once a booming logging community, known for harvesting some of Idaho’s largest yellow pine. Today, the region is recognized for exceptional barley, wheat, and grass hay production.
The cutover timber soils of the area produce diverse, nutrient-rich grasses and forbs that our sheep thrive on throughout the summer months. By combining timber grazing with rotational cover crops, we raise American White Face lamb that is mild, tender, and deeply flavorful—often surprising folks who “thought they didn’t like lamb.”
Eric and Sheila Hasselstrom farm this ground alongside their three children, Kameron, Hunter, and Koleen. What began as a cattle operation evolved naturally into sheep as the family grew and transitioned—always adapting, always rooted here.
Our Livestock & Direct-to-Consumer Focus
Our operation includes both sheep and cattle, raised with the same principles: open grazing, thoughtful nutrition, and respect for the animal from start to finish.
We proudly offer direct-to-consumer lamb and beef, connecting families straight to the source of their food. A portion of our lambs are selected and finished specifically for customers who value traceability, flavor, and integrity in their meat.
This isn’t commodity production—it’s intentional food for real people.
Hunting at Hasselstrom Farms
Our property supports a thriving wildlife population, making it an exceptional place for responsible, ethical hunting.
Hunters may encounter:
Whitetail deer
Elk
Turkey
Coyotes and other small game are common, with occasional sightings of bear and mountain lion—part of living in true Idaho backcountry.
The combination of timber, open ground, cover crops, and natural travel corridors creates excellent habitat and dynamic hunting opportunities throughout the season. We value respectful hunters who appreciate private land access, habitat stewardship, and a genuine outdoor experience.

For guests who choose the farm breakfast option, we offer a simple, hearty morning meal featuring products raised right here on the farm—think farm-fresh eggs, our own meats, and seasonal accompaniments.
